Does anyone have any really solid Mexican Recipes for Quesadilla's/Burritos/Taco's to share?

I would have to search for the exact measurements but burrito sauce 

1can tomato sauce

chili powder cumin oregeno and cocoa powder heat on stovetop

Fried Rolled Tacos - Flautas

  • 1 cup finely chopped cooked chicken
  • 12 flour tortillas
  • vegetable oil Spoon one heaping tablespoon of chicken across the bottom of each tortilla. Roll up tightly; secure with a wooden toothpick.

    Heat 1 inch of oil in a heavy skillet. Fry flautas, turning frequently, until brown. Drain on paper towel. Serve with fresh salsa, sour cream and guacamole

    Jalapeno Cream Cheese

    16 oz cream cheese

    2 spoonfuls mayonnaise

    1/4 tsp all purpose seasoning

    1/4 tsp chicken bouillon

    Mix all ingredients together until well blended and smooth.  Add 1 to 2 diced jalapeno peppers. (add more if you like hotter) Blend until all mixed together.

    The longer the sits, the hotter it will get.

    Those are some great recipes. The Jalapeno Cream Cheese looks good. Did u get that off of the CreamCheese.com website? They have a cool Entertaining Recipe Widget that helps u plan get togethers. It lets u select movie nights, bday parties, etc..and it gives u recipes to serve at that event.   Lots of good recipes.

    No, there is a resturant in Scottsdale that has it, and it is delicious!  So they gave me the ingredients and I played with it to get the level for on setting.

    This is fabulous on chips, chimichangas, veggies, crackers, and enchiladas.  Not a fan of it on tacos or burritos - but to each his own taste.

                                 SHRIMP SALSA 

     1/3 pound frozen cooked shrimp, thawed and deveined

    1/4 cup chopped peeled avocado

    3 tablespoons chopped onion

    3 tablespoons chopped tomato

    3 tablespoons chopped radishes

    4-1/2 teaspoons lime juice

    1 tablespoon minced fresh cilantro

    2 teaspoons chopped jalapeno pepper

    2 teaspoons olive oil

    1/4 teaspoon salt

    Dash pepper

    Tortilla chips

    Directions:

    Cut shrimp into small pieces; place in a small serving bowl. Stir in the next 10 ingredients. Cover and refrigerate for at least 1 hour. Serve with tortilla chips. Yield: about 1-1/3 cups.
