I am about sick and tired of cooking the same things all the time. anyone have any yummy simple fall recipes for chicken?

Have you made that one with tomato soup? I think it's sweet and sour chicken. My DH hates it but I think it's yummy. It's a can of tomato soup, 1/4 cup water, some sugar, some vinegar (I can't remember how much, and I can't find the darn recipe right now)and then you brown the chicken in a pan and then pour the mixture over top and let it simmer in it.

You can make Chicken ala King...

Chicken Parmesean...

This yummy stuffed chicken my sister taught me to make...

Cut a pocket in the side of each of your chicken breasts. Put a slice each of colby-jack and cream cheese inside and then close it up. Dip each breast into milk and then bread crumbs mixed with a little parmesean cheese. Then set them in a baking pan. In a frying pan melt 1/4 cup butter add 2 tbsp lemon juice and some minced garlic. Simmer the three together (it smells so good!) The drizzle it over the top of your breaded breasts. Then pop it in the oven at 375 for 45 minutes. It's delicious.

I have a million more (I love chicken) but that's what was at the top of my head right now.

And some nice Autumn Cheesecake to go w that   UUMMMM     dont forget the squash  w the chicken either   so many  great   things for fall foods

The first time I cooked this it wasn't that simple but now its easy but my family likes this (even my picky 5 yr. old )I got it from a recipe book @ the library.

                                           Serves 6                 

                                 Chicken With Rice (Arroz con Pollo)

 

1 1/2 15 oz. cans (about 3 cups) of Chicken broth

1/4 teaspoon saffron (optional)

1 -2 1/2 -lb chicken cut into 8 serving pieces

4 tbsp. olive or other cooking oil

1 tsp. paprika

1/2 tsp. minced garlic

1/2 tsp. oregano

1- lg. onion

1/2 c. sliced fresh mushrooms or 1- 3 oz can of sliced mushrooms

1 c. finely chopped fresh tomatoes or 1 8 oz. can (1 c.) tomatoes

1 1/2 c. white rice, uncooked

1/2 tsp. salt

fresh ground pepper to taste

1. Bring chicken broth to a boil, sprinkle with saffron and stir gently,Set aside.

2.Meanwhile rinse chicken pieces in cool water & pat dry with paper towel. Coat chicken pieces with a mixture of 1tsp. oil, paprika,garlic,& oregano. Heat remaing 3 tsp. oil in lg. skillet with a lid. Saute chicken pieces until golden. Set aside on a platter.

3. Saute onion & mushrooms in the skillet until onion is almost soft. Stir in tomatoes. Add rice and toss till coated.

4. Add chicken broth, chicken pieces, salt,& pepper. Bring to a boil, lower heat, cover,& simmer until the chicken is tender & rice has absorbed the liquid. (20 to 30 min.)

My hubby enjoys a homemade chicken helper i make.  so simple...

 Cut chicken tenders or breasts into little cubes, and brown.

make pasta, i use elbow but any kind you like. 

Once the chicken is done at Ragu light alfreado sauce and warm with the chicken. 

Add the pasta and then whatever seasonings you prefer, I add garlic, basil, and oregano. 

 

I use this with ground beef too... it's good and you skip the preservatives of the hamburger helper kits!

 

ALSO... I made fried apples last night.. great fall food.  and so easy!  Slice the apples, melt butter in frying pan.. add apples, simmer til they are soft.  then add some sugar and cinnamin and cook a bit longer.. delicious!!

I made this a few weeks ago...kinda just happened and its yummy.  I took Two boxes of stove top stuffing and followed directions on box.....then I added 6 eggs and a little milk (1/4 cup) Then I added 1 cup of shredded cheese...I used the colby jack mix.  I put all of this in a cassarole dish with tin foil over and baked for 15 minutes.  Then sprinkled more cheese on top and put back in oven for 8-10 minutes.  I think I had oven at 375.  It was wonderful!!!!  The kids ate most of it, it was a hit.

Okies  Heres a Really SIMPLE  Tasty  Cheap  Fast chicken dish  perfect for fall   busy nites  

    2 boxes chicken Ricearoni w Vermicilli

    2 to 4 cups cut up chicken  (can use diced up rotissery ,those prepackaged  cut chicken or boil a bird )

     at least one lg diced/minced apple,depending on amount meat

    at least 1 or 2 cups Raisens   ditto  or to taste for fruit,

  we like to add mushrooms 

      prepare  Ricearoni as directed on stovetop, add broth stead of water if you like  Even green Tea  can be used stead o water,   I add chopped/diced apple and raisens to  browning vermicilli , liquid and continue w directions   fast easy DELICIOUS!!!  Grumpy adores it
